Especially on the weekends, I like to try and mix things up and treat myself to something a little more exciting. These Glazed Cranberry Pecan Muffins are perfect for a weekend treat, or breakfast on the go.

Glazed Cranberry Pecan Muffins

When I bake muffins, I love to make a large batch and freeze some of them afterward. I always feel guilty having so many sweet treats in the house after baking and trying out new recipes, but freezing them helps them to last longer and reduces waste.

This recipe makes 18 muffins, so you’ll be able to make them last for a few weeks and spice up your breakfast routine for a while!

The prep time is only 10 minutes for this recipe, and then they’ll need 25 minutes in the oven. So next weekend when the kids are asleep, whip these up, and they’ll be well impressed when they wake up! With cinnamon, nutmeg, ginger, and orange in the mixture, they have the perfect seasonal twist and are a great winter breakfast for everyone to enjoy.

By adding cranberries and pecans, they are a decadent, seasonal muffin that you can enjoy throughout the winter.

Glazed Cranberry Pecan Muffins

Super Easy DIY Air Fryer Pop Tarts https://manthatlooksgood.com/diy-air-fryer-pop-tarts/ https://manthatlooksgood.com/diy-air-fryer-pop-tarts/#comments Wed, 02 Apr 2025 19:42:10 +0000 https://manthatlooksgood.com/?p=950 DIY Air Fryer Pop Tarts have always been one of Reese’s favorite go-to snacks, but I’m always trying to look for healthier snacks that are not processed and loaded with sugar. With their extensive range of flavors, they are such a tempting and quick breakfast or afternoon snack.

However, as someone who loves to cook, I’m always aware of the ingredients I’m putting into everything I make and therefore what I’m putting into Reese’s body. Sometimes I’m just not happy with what I see on ingredient lists anymore, so I try and find easy alternative ways to make them myself!

DIY Air Fryer Pop Tarts

Pop-Tarts have been around since 1964 and are a kitchen staple in many households. They’re so easy to pop in the toaster or microwave to warm up. I’m always interested to see what new limited-edition flavors come out, and I love some of the seasonal options in the range.

My recipe today takes only 30 minutes to make. With very few ingredients, they are a quick and easy breakfast to make for the whole family. Kids will love them, and they won’t even notice the difference between your creation and the store-bought ones.

DIY Air Fryer Pop Tarts

They are really fun to make with kids, and they’ll love helping out and getting involved before eating their creations. They will particularly enjoy decorating them, and you can switch out the sprinkles for anything you’d like to finish them off with. Let your kids get creative and add their personal touch to their breakfast!

If you’re like me and always in a rush before school or work, you don’t want breakfasts taking too long. So I’ve saved time on this recipe by using a pre-made pie crust. This means less time cooking, and more time eating! I chose to use strawberries in this recipe to get in some fresh fruit but If you aren’t a fan of strawberries, raspberries or blueberries are other good choices.

I made this recipe in my air fryer so I didn’t have to pull out my deep fryer. I love my air fryer, it’s one of my favorite kitchen appliances. I’ve had mine for a couple of years now, and I couldn’t imagine my kitchen without it.

Air Fryer Pop Tarts

I always find the food I make in the air fryer tastes healthier and fresher than deep-fried foods. It means your cooking is lower in fat and calories and you don’t have to use too much oil. Some of my other favorite dishes to make in the air fryer are fries and donuts. I’ve even tried making chocolate chip cookies in it recently, and they were delicious!

I’m planning to make these Super Easy DIY Air Fryer Pop-Tarts as a treat over the holidays. I think they would be a fun addition to your Halloween dessert buffet if you swap the sprinkles for orange and black ones. Your kids will be thrilled to see a familiar snack!

Ingredients

  • 1 cup strawberries
  • 1/8 cup white sugar
  • I package rolled unbaked pie crust 2 in the package
  • ½ cup powdered sugar
  • 1 teaspoon of lemon juice
  • Sprinkles

How to Make Super Easy DIY Air Fryer Pop Tarts

Step 1:

In a microwavable bowl, mix the strawberries and sugar and place in the microwave for 5 minutes. Stir. Put back in for another 2 minutes. The filling should now look like a jelly (a runny one). Let it cool for at least 30 minutes.

Step 2:

Roll out dough sheets and cut each one into a large square. From there, create 4 equal squares per sheet.

Step 3:

Add about a tablespoon of filling to the top of 4 of the pastry sheets.

Step 4:

Place the tops on each of the 4 bottoms with filling and take a fork to press in around the edges.

Step 5:

Spray each pop tart front and one back with a nonstick spray and cook in the air fryer for 7-10 minutes. Check them for browning, you do not want to burn them, but you do want them a golden color.

Step 6:

When done, place on a cooling rack for 30-45 minutes. Enjoy.

Some Tips

  • Save time by using store-bought rolled unbaked pie crust.
  • Make sure the strawberry filling is completely cooled before assembling the Pop-Tarts
  • Be careful not to overfill the Pop-Tarts with the strawberry mixture. Too much filling can cause them to burst open during cooking.
  • Press the edges of the Pop-Tarts firmly with a fork to seal them shut.
  • Keep an eye on the Pop-Tarts while they’re in the air fryer to prevent burning.

Perfect pairing with this DIY Air Fryer Pop Tarts

Cucumber Pineapple Smoothie Recipe https://manthatlooksgood.com/cucumber-pineapple-smoothie-recipe/ https://manthatlooksgood.com/cucumber-pineapple-smoothie-recipe/#respond Sat, 29 Mar 2025 03:50:48 +0000 https://manthatlooksgood.com/?p=5347 This is easy-to-make green Cucumber Pineapple Smoothie, delicious, simple, and pairs perfectly with many desserts.

I love making green smoothies because I enjoy mixing green ingredients with sweet fruits, just like I did with this Cucumber Pineapple Smoothie recipe. Even though I haven’t shared many green smoothies lately, my last one was a copycat Panera Green Passion Smoothie recipe.

I didn’t use only cucumber and pineapple for this smoothie, but also added banana for extra creaminess and baby spinach for a fresh taste, along with that beautiful green color at the end.

The taste of this Cucumber Pineapple Smoothie turns so delicious, creamy, and refreshing of course, and it should definitely be added to your green smoothie list.

You can also add ingredients like honey for extra sweetness or even other fruits to make it perfect for your taste.

What is Cucumber Pineapple Smoothie?

Cucumber Pineapple Smoothie is a refreshing simple green drink that mixes the hydrating taste of cucumber with the tropical sweetness of pineapple. Also, I used Bananan to give it a nice creamy texture, This smoothie is packed with so many flavors which makes it delicious and perfect to be enjoyed for breakfast or a snack and a great idea for anyone looking for a tasty way to sneak more greens into their diet. Additionally, this smoothie is not only delicious but also offers numerous health benefits, particularly through the pineapple cucumber juice benefits it provides. Cucumber is known for its high water content and can help keep you hydrated, while pineapple is rich in vitamins and enzymes that support digestion. Together, they create a nutritious blend that can boost your energy and enhance your overall well-being.

Ingredients

  • 1 cucumber (peeled and chopped)
  • 1 cup fresh pineapple chunks
  • 1/2 banana (optional)
  • 1/2 cup baby spinach
  • 1/2 cup coconut water
  • 1 tablespoon honey (optional for sweetness)
  • 1/2 cup ice cubes

Kitchen Equipment Needed

  • Blender
  • Measuring cups and spoons
  • Knife and cutting board
  • Glass for serving

How to Make Cucumber Pineapple Smoothie?

Step 1:

Start by peeling the cucumber and cutting it into small pieces. Put the cucumber in the blender.

Step 2:

Next, add the pineapple chunks. If you want it creamy, add half a banana like I did, making it even tastier, smoother, and softer.

Step 3:

Add the spinach to give the smoothie a nice green color.

Step 4:

Pour in the coconut water or regular water to help it blend, I used Coconut water. If you want it sweeter, add honey, and finally ice to make the smoothie cold.

Step 5:

Blend everything until it’s smooth and thick. The smoothie should look green and creamy. Enjoy.

Some Tips!

  • Peeling the cucumber helps make the smoothie smoother. If you leave the skin on, it might be a bit chunky, so it’s easier to blend without it.
  • Fresh pineapple gives a sweeter and fresher flavor, but you can use canned pineapple if that’s what you have.
  • I love to add Spinach as it makes the smoothie greener but doesn’t change the taste much and also I add banana for a creamier texture.
  • If you freeze the pineapple or banana ahead of time, you don’t need to add as much ice.
  • Don’t forget to taste the smoothie. If it’s not sweet enough, add more honey or banana. If it’s too thick, add more coconut water.

How to Store Leftovers,

If you happen to have any leftovers, pour the smoothie into an airtight container and store it in the refrigerator. It will stay fresh for up to 24 hours. Be sure to give it a good shake before drinking, as it may separate a bit while sitting. For a quick refresh, you can blend it again with a little ice.

What to Eat with Cucumber Pineapple Smoothie?

I love this Cucumber Pineapple Smoothie with muffins, especially when I pair it with Gingerbread Muffins or Cranberry Pecan Muffins. The sweetness of the muffins balances the refreshing flavors of the Cucumber Pineapple Smoothie perfectly. It also pairs well with a light breakfast like avocado toast, or a spinach and feta omelet, Also a cheese sandwich or a quinoa salad is great to have with it too. Also, you can pair it with oatmeal cookies, or a slice of Persimmon Banana Bread for more tropical flavors.

FAQ

Can I use frozen cucumber?

Yes, you can use frozen cucumber, though it may slightly change the texture. It will make the smoothie colder and thicker.

Is this smoothie vegan-friendly?

Yes, this recipe is vegan as long as you use a sweetener like agave instead of honey.

Can I skip the spinach?

You can, but the spinach helps give the smoothie its vibrant green color and adds extra nutrition without affecting the taste.

What can I use instead of coconut water?

You can use plain water, almond milk, or any juice like orange or pineapple juice.

How can I make it less sweet?

Simply skip the honey and use water instead of juice. You can also reduce the amount of pineapple or add more cucumber.

Can I use other greens instead of spinach?

Yes, you can use kale or even lettuce, but spinach blends best for a smooth texture.

How do I make it thicker?

For a thicker smoothie, use frozen fruit, add more ice, or use a creamy base like yogurt.

Conclusion

The Cucumber Pineapple Smoothie is a delicious, refreshing, and healthy drink that you and your family will love. It’s simple to make, full of fresh ingredients, and can be customized to suit your taste. Whether you enjoy it as a quick breakfast or a midday snack, it’s sure to leave you feeling energized. White Lily Cornbread Recipe https://manthatlooksgood.com/white-lily-cornbread-recipe/ https://manthatlooksgood.com/white-lily-cornbread-recipe/#respond Sat, 29 Mar 2025 02:11:07 +0000 https://manthatlooksgood.com/?p=5209 This is a soft and crunchy White Lily Cornbread, made with White Lily Self-Rising Cornmeal Mix and a few other simple ingredients.

It’s been a long time since I shared a cornbread recipe. My last one was months ago, which was the No Egg Cornbread. To be honest, I didn’t even make it for the family, not because I didn’t love it, but because no one seemed to ask for it. So, you can tell that cornbread isn’t a popular choice in my home.

Cornbread was a favorite choice when I was a kid. I still make it the old classic way (my granny’s way). This time, I made it using a cornmeal that I saw many people praise.

I used the White Lily Self-Rising Cornmeal Mix, which made the cornbread light, and the taste was good, not perfect, but still really good to enjoy.

What is White Lily Cornbread?

White Lily Cornbread is an easy cornbread made using the White Lily Brand, I used their Self-Rising Cornmeal Mix, which is known for its soft, milled texture. Also, I used buttermilk, eggs, and butter or oil. The White Lily cornmeal mix helps make the cornbread lighter than other brands, thanks to its fine grind and self-rising ingredients, which include baking powder and salt. The taste is sweet with a nice softness that makes it a perfect side for lots of meals.

Ingredients

  • 2 cups White Lily Self-Rising Cornmeal Mix
  • 1 ¼ cups buttermilk
  • ¼ cup vegetable oil or melted butter
  • 1 large egg
  • 1 tablespoon sugar (optional)

Kitchen Equipment Needed

  • Large mixing bowl
  • Medium mixing bowl
  • Whisk
  • Cast-iron skillet or baking pan
  • Measuring cups and spoons
  • Oven mitts
  • Toothpick for testing doneness

How to Make White Lily Cornbread?

Step 1:

Turn on the oven to 425°F (220°C). If you have a heavy pan (I used a cast-iron skillet), put it in the oven to get hot.

Step 2:

In a big bowl, mix the dry stuff: the cornmeal and sugar (if you’re using sugar of course). Stir them together well.

Step 3:

In another bowl, mix the wet stuff: buttermilk, egg, and oil or butter. Stir until it’s all smooth.

Step 4:

Now, Pour the wet mix into the dry mix. Stir until it’s just mixed.

Step 5:

Pour the batter into the hot pan and Bake for 20–25 minutes until the top turns a beautiful golden brown. After it is cooked, let it cool a little, and then enjoy.

Some Tips!

  • I always Put the skillet in the oven while it heats up, so I can get a crispy crust on the bottom of my cornbread.
  • Stir the wet and dry ingredients just enough to combine them. and remember that Too much mixing will make the cornbread tough which I don’t like.
  • Before pouring in the batter, make sure to grease the pan with oil so the cornbread doesn’t stick.
  • I love to use cast-iron skillet as for me is the best for cornbread because it gets really hot and helps make the outside crispy.
  • Some people like a little sweetness in their cornbread. You can add a tablespoon of sugar if you want a hint of sweetness.

How to Store Leftover?

If you have leftover cornbread, wrap it up tight in plastic or put it in a container with a lid. You can leave it on the counter for two days or put it in the fridge for up to four days.

What to Eat with White Lily Cornbread?

White Lily Cornbread is like any other classic cornbread that pairs delicious with so many dishes, My always first option to have with is a hearty bowl of chili with different flavors, where the soft sweetness of the cornbread balances the spicy flavors of the chili. It’s also great to have it with a warm, creamy bowl of chicken soup, or serve it with collard greens and ham for a traditional Southern combo. If you want to have it for breakfast, you can enjoy it with scrambled egg or Rice Paper Omelette, or even drizzle some honey on top and pair it with buttered grits.

FAQ

Can I use regular cornmeal instead of White Lily?

White Lily cornmeal is lighter, if you want to use a different cornmeal, you can, but the texture might be a bit different.

Can I make this recipe gluten-free?

Yes, you’ll need to use a gluten-free cornmeal mix. Be sure to check that all other ingredients are gluten-free as well.

How do I get a crispy crust?

The best way to get a crispy crust is to preheat your cast-iron skillet in the oven before pouring in the batter.

Can I add extras like cheese or jalapeños?

You can mix in some shredded cheese, chopped jalapeños, or even corn kernels to customize your cornbread.

Conclusion

White Lily Cornbread is a simple delicious addition to any meal. I used the White Lily brand to give the cornbread a light texture. Try it out, share the recipe with your friends and family, and be sure to subscribe to my blog for more Cornbread recipes with different versions.
